If you're still on windows in 2022, may I suggest you to use other software where you can produce better images with less metadata and potentially better quality; xnview is often recommended first and for editing/exporting I recommend GIMP. Hope you will consider trying them.
And also I would suggest, if you don't have problem with that, to not use subsampling for jpeg files, that really produces a lot of artifacts. Please respond, I will clean from garbage one of your scan, and you will how it goes. Many thanks for your awesome work!
Hey Man, I'm just here for FUN, not for technology. Note only that I usually remove defects and unwanted text. I also crop pictures and assemble double pages. I use as well Epson Scan, Paintshop Pro, Windows, XnView and Photo Filtre.
